Summer is on its way, and with it comes longer days, looser schedules and more time outdoors. It’s a season when you shouldn’t have to choose between spending time with friends and family or spending time in the kitchen. So make cooking easy with a simple summer quesadilla! Kid-friendly and cooking in a matter of minutes, quesadillas can quickly become a substantial lunch or dinner with the addition of fresh fruit, veggies or grilled meats.  Serve them with your favorite dips and sauces and see how simple summer cooking can be!

 

BBQ Chicken & Peach Quesadillas

Prep time: 5 minutes | Cook time: 5 minutes

Ingredients

2 La Tortilla Factory Light Flour Tortillas

1/4 pound chicken, grilled or shredded (leftovers work great!)

1/3 cup of your favorite BBQ sauce

1 fresh peach, thinly sliced

2 ounces reduced fat provolone or Jack cheese, shredded

2 olive oil sprays

Directions

Place chicken and BBQ sauce in a bowl. Toss to coat chicken completely and microwave for 2 minutes or until warm.  Next, heat a sauté pan on medium heat.  Place one tortilla in the pan and heat until warm. Spray the tortilla with a small amount of spray oil and flip – this will help with crisping. Layer with one ounce of cheese, chicken, peach slices and finish with the remaining cheese. Place another tortilla on top and lightly coat with oil spray, let quesadilla cook for a few minutes until the cheese begins to melt. Next, using a spatula, carefully flip the quesadilla and continue cooking until the bottom is golden brown. Slice into four and serve with a side of BBQ sauce for dipping. Enjoy immediately.
