My new year’s resolution this year was to eat better and lose weight. Normally my new year’s resolutions would be long forgotten at this point. This year, however, I followed through with my plan and have had great success! I’ve lost a total of 40 lbs. so far and am still going strong. I don’t really look at the changes I’ve made as a “diet” per se. I consider them a “lifestyle change”.

I’ve started eating fresh food whenever I can, cut back on the heavy carbs and sugary foods and drink lots of water. I love eating wraps because there’s so many ways you can create different meals with fresh ingredients. I’m never bored!

La Tortilla Factory has a smorgasbord of wraps! I’m amazed at how diverse a selection they have. I’ve tried a bunch of varieties so far and have been impressed by the quality and taste. My personal favorite are theĀ Low Carb, High Fiber Tortillas. They are perfect for my low carb diet! They are chock full of fiber (52 percent of recommended daily value) and great taste!

Ā Soft Wrap Minis are a great size for kids or for a snack sized wrap. I like that they are only 50 calories per wrap and come in five yummy flavors: White Whole Wheat, Honey Oat, Fiesta, Multi-Bran and Three Seed. My 7 year old loves the Fiesta wrap!

Ā Extra Virgin Olive Oil SoftWrapsā„¢ have all the benefits of extra virgin olive oil (a healthy fat) and are big on taste. These ones are my husband’s favorite. No surprise there since they were named one of the “Best Food for Men”

This Grilled Salmon Wrap recipe is very versatile. You can serve it with your favorite La Tortilla Factory wrap! For our family, I used the Low Carb, High Fiber TortillasĀ  for me, Soft Wrap Minis for the kids and Extra Virgin Olive Oil SoftWrapsā„¢ andĀ 100 Calorie Tortillas for my husband.

Ingredients:

  • 3 to 4 salmon fillets
  • Mixed greens or lettuce of your choice
  • Assorted La Tortilla Factory Wraps (choose your favorite!)

Marinade:

  • 1/2 cup lemon juice
  • 1/4 cup shallot, finely chopped
  • 3 tbsp. olive oil
  • 2 tbsp. fresh dill
  • 2 cloves garlic, minced
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Garlic Greek Yogurt Sauce:

  • 3/4 cup plain Greek Yogurt
  • 1 clove garlic, minced
  • 1 1/2 tsp. lemon juice
  • 1 tsp. olive oil
  • 1/2 tsp. salt

The first step is to make the marinade. In a small bowl, combine lemon juice, shallots, oil, dill, garlic, salt, and pepper. Spoon over salmon and let marinate in the fridge for an hour.

Next up is the Garlic Greek Yogurt Sauce. In a bowl, combine yogurt, garlic, lemon juice, oil and salt. Put in the fridge until you are ready to use.

Grill the salmon on either an indoor grill or barbecue until cooked. If you don’t own a barbecue you could also bake it in the oven.

To assemble, spread a dollop of the yogurt sauce on each wrap. Top with lettuce. Slice pieces of the salmon and add to the wrap. Roll up the wrap and serve. Makes about 6 to 8 wraps. Enjoy!
