Holy guacamole! We’ve given these wraps — our spin on a classic BLT (with extra credit for avocado) — a kid-friendly upgrade that parents will approve of, too. Baking the bacon is an easy way to cook a lot at once, and you can do it up to 4 days ahead for quick lunch assembly on busy mornings.

Neat Cheat: Buy precooked bacon at the supermarket.

Ingredients

8 slices bacon

4 La Tortilla Factory Simply Better Whole Wheat Tortillas or Low Carb Flour Tortillas

1/4 cup mayonnaise

4 Romaine lettuce leaves

1 large avocado, thinly sliced

2 tomatoes, sliced

Directions

Preheat oven to 375°F.

Lay bacon in a single layer on a sheet pan. Bake 15 minutes or until crisp, turning halfway through. Transfer bacon to a paper-towel-lined plate to drain.

Lay wraps on a work surface. Spread evenly with mayonnaise. Layer evenly with lettuce, avocado, tomatoes and bacon. Roll up and wrap in parchment or waxed paper.
