Strawberry-Lime Cheesecake Galette

This dessert is a nod to the French free form pie known as a galette crossed with a Mexican buñuelo — with all-American strawberry cheesecake topping. Kids can help shape the tortillas, make the cream cheese mixture and decorate the galettes for a fun Mother’s Day project.

 Make-Ahead Tips:

  • Prep and bake the tortillas up to 2 days ahead; cool and store in an airtight container.
  • Up to 1 day ahead, make the cream cheese mixture and whipped cream (if using); cover and refrigerate.

1 Package Non-GMO Flour Tortilla, Burrito Size

4 tablespoons butter, melted

2 tablespoons sugar

2 (8-ounce) packages cream cheese, softened

1¼ cups confectioner’s sugar

1½ teaspoons vanilla extract

Salt, to taste

1 pound fresh strawberries, hulled and quartered

2 tablespoons honey

1 teaspoon lime zest

1 teaspoon fresh lime juice

Whipped cream, for garnish (optional)

Mint sprigs, for garnish (optional)

Preheat oven to 400°F. Place 1 baking sheet the oven while it preheats.

Working with 1 tortilla at a time, lay tortilla on a work surface. Brush on both sides with butter. Sprinkle both sides lightly with sugar. Prick surface of tortilla with a fork (to prevent it from puffing as it bakes). Fold up 1½ inch around the border, pleating every couple of inches. Dampen the pleats with water and press firmly to adhere. Repeat with remaining tortillas (it’s fine to stack them as you go). Arrange tortillas in a single layer on preheated baking sheets. Bake 8-10 minutes or until golden. Flip and bake 5 minutes or until golden. Transfer to a wire rack and cool completely.

In a medium bowl, beat cream cheese, confectioner’s sugar, vanilla and a pinch salt until smooth. Combine strawberries, honey, lime zest and juice, and a pinch of salt in another medium bowl.

Spread cream cheese mixture evenly in center of tortillas. Top evenly with strawberries. Garnish with whipped cream and mint, if desired.
