Hosting a party? Pull double duty with this side dish that serves as a centerpiece. A little bit sweet and a little bit spicy, it’s almost too pretty to eat…almost.

Ingredients

1 whole pineapple

3 cups diced, seeded plum tomatoes

1 cup red onion, finely chopped

1/4 cup cilantro, finely chopped

1/4 cup jalapeƱo, finely chopped, seeds removed (adding seeds adds heat so choose carefully!)

3 tablespoons fresh lime juice

A pinch of Kosher salt and black pepper

Hot sauce to taste

Directions

Very carefully, cut the pineapple in half lengthwise, leaving the leaves intact. Use a large metal spoon to scoop out as much pineapple as possible to create a hollow boat. Dice enough pineapple for 3-4 cups being sure to not use any of the core.

In a large bowl, mix all of the ingredients together and toss, coating the mixture with lime juice and pineapple juice. Add dashes of hot sauce to taste.

Transfer mix to the pineapple boat. Refrigerate for 30 minutes to allow flavors to chill and blend before serving.
