Don’t fumble on healthy eating during The Big Game. Follow these three simple tips to stay on track and enjoy the afternoon rooting for your favorite team.

1. Kick Off Feeling Full. Eat a healthy lunch before you show up to the party to stave off snack table temptations. Opt for something fresh and protein packed, as party options will most likely be “junk foodie”. A large salad topped with lunch meat or sliced chicken breast, wrapped in a high fiber, low carb tortilla should do the trick. Each original size low carb tortilla has 5 grams of protein, plus the fiber in the tortilla will keep you feeling fuller longer.

2. Pass on High Calorie Drinks. Doctor up a simple cocktail or a glass of wine with a generous splash of sparkling water. Add fruit or lime wedges for extra pizzazz. The bubbly water cuts the calories, keeps your belly full and increases the drink portion size, thus ensuring you’ll never be empty handed throughout the afternoon.

3. Touchdown with a Healthy Option. Surely you will not be the only person at the party watching their weight or committed to eating healthy. Be a team player and bring a healthy option or prepare one if you’re hosting. These Spicy Steak and Bell Pepper Quesadillas are stuffed with tequila lime steak, low-fat pepper jack cheese and minced jalapeno. They’re so good, your fellow football fans won’t even suspect they’re healthy!

 

Spicy Steak and Bell Pepper Quesadillas

Prep time: 15 minutes | Cook time: 45 minutes

Ingredients

2 tablespoons tequila lime seasoning (available at most grocery stores in spice aisle)

10 ounces flat iron steak 1 tablespoon Canola oil, plus more for brushing

1 small yellow onion, thinly sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

salt and pepper to taste

1 package La Tortilla Factory Low Carb, High Fiber Tortillas, Original Size

1-3/4 cups grated low-fat pepper Jack cheese, divided

1-2 tablespoons minced jalapeño

Garnish idea: fresh salsa

Directions

Preheat grill.

Rub tequila lime seasoning on steak and brush with oil. Grill steak 5 minutes on each side or until desired degree of doneness. Let meat rest 5 minutes.

While steak rests, heat a large nonstick pan over medium-high heat. Add 1 tablespoon oil to pan. Add onion and bell peppers; sauté 5 minutes or until tender. Season with salt and pepper.

Thinly slice steak across the grain. Lay 5 tortillas on a flat work surface. Divide 1-1/2 cups cheese evenly among tortillas. Divide steak and jalapeño among tortillas. Top evenly with onion and bell pepper mixture and remaining 1/4 cup cheese. Top with remaining tortillas.

Heat a large nonstick pan over medium-high heat. Place 1 quesadilla in pan and cook 3 minutes per side or until golden brown. Repeat with remaining quesadillas. Keep cooked quesadillas warm in a 200F oven.
