The sights, smells, and sounds of summer are the perfect reason to plan a summer picnic.  Choosing “the best spot” is probably one of the most important elements. Choose a spot with a scenic view—near a lake or river, in a beautiful park, etc.

Once location is determined, it’s time to prepare the menu. How about livening up your picnic with colorful and sophisticated pinwheels for something new?

Salmon Pinwheels

  • 2 Tbsp. whipped cream cheese spread
  • 2 oz thinly sliced smoked salmon
  • 2 tsp. chopped fresh herbs such as dill, chives, or flat leaf parsley
  • ½ cup fresh spinach
  • 2-3 tsp. Dijon mustard
  • 1 tsp. soy sauce

Mix cream cheese, Dijon mustard , chopped herbs, and soy sauce together to make a sandwich spread. Spread on tortilla. Next, layer spinach leaves, then thinly sliced salmon on top of spread. Roll into a tight jelly-roll. Use wax paper to wrap, and then twist wax paper ends to close. Freeze for 15 minutes, or refrigerate for 30 minutes to “set” the roll prior to packing for your picnic. Cut into pinwheels using a sharp serrated bread knife when you arrive at your picnic spot.

Watermelon Salad

Pair pinwheels with a unique and fresh twist on sliced watermelon—create a Watermelon Salad! Drizzle fresh sliced and cubed watermelon (rinds removed), with balsamic vinegar (or black cherry balsamic vinegar). Before serving, toss with crumbled feta cheese, and top with fresh chopped flat leaf parsley. Keep cool in an ice chest until ready to serve.
