In honor of National Nutrition Month here is a delicious, healthy recipe from La Tortilla Factory using our new Fiber & Flax Corn tortillas .



Roasted Veggies with Hummus Tacos

Serves 1


  • 1 teaspoon olive or canola oil
  • 2 oz zucchini, finely chopped
  • 2 oz cauliflower, florets
  • 2 oz red bell pepper, finely diced
  • 2 oz yellow onion, finely diced
  • ¼ teaspoon kosher salt and freshly ground pepper
  • 4 tablespoons hummus

  1. Preheat oven to 425°F. Combine the zucchini, cauliflower, bell pepper and onion, toss together with oil, salt and pepper then transfer to a sheet pan and bake in the oven for 20 minutes or until light brown.
  2. Divide into two portions and spread half of the hummus on a tortilla and top with half portion of the veggies mixture.
    1. To eat like a taco, fold up sides or roll around the filling.
    2. Repeat with the remaining tortilla.
