You scream, I scream, we all scream for ice cream and TORTILLAS!  Here’s a fun, and sweet tortilla treat from the La Tortilla Factory Test Kitchen. Make these Grab-and-Go Mini Ice Cream Sundaes as a decadent dinner party dessert or have fun with your kids in the kitchen. They work great either way!

 

 

 

 

 

 

 

 

 

 

 

 

Ingredients:

  • 1 package Smart & Delicious Mini Wraps- Honey Oat variety
  • Cinnamon-sugar mixture (ratio: 1 cup granulated sugar to ¼ cup ground cinnamon)
  • Canola oil cooking spray
  • Vanilla ice cream, or vanilla frozen yogurt (chocolate, Neapolitan flavors will work as well)
  • Fresh fruit such as sliced strawberries, banana, blueberries, raspberries, etc
  • Optional: caramel sauce

Instructions:

One day ahead, or morning of:

  1. 1. Using serrated cutter cut tortilla into rounds.  Note: One 8ct package of tortillas will provide 24 rounds
  2. Press tortilla rounds into muffin cup and bake at 400°F for approximately 15 minutes, or until crispy and golden brown. Note: watch closely so tortilla rounds do not burn. You should have small “mini-tartletts” that are crispy to the bite.
  3. While still warm/slightly hot; spray tortilla tartletts generously with canola oil making sure both sides are evenly and very well coated with oil.
  4. In a medium bowl toss warm tortilla tartletts in sugar-cinnamon mixture until tortilla rounds are evenly coated with sugar-cinnamon blend. Note: the sugar-cinnamon blend should “stick” to tortilla rounds; if it does not you will need to be more generous when applying canola oil spray.
  5. Let cool completely, and store in zippered bag until ready to use. Leave bag slightly open so that rounds continue to harden and dry out.

Day of:

Top with ice cream fresh fruit, sprinkles and caramel sauce (if desired).

Special Tools:

  • 3” serrated cutter, can be bought at any specialty baking store
  • 2- twelve cup muffin pans with approximately 3” diameter
  • Canola oil spray
