Quesadillas aren’t just for appetizers!

Using the tasty new La Tortilla Factory Soft Wrap Minis, quesadillas are a fun and nutritious way to enjoy your breakfast with a Mexican twist. Serve this with a little guacamole or your favorite salsa on the side for dipping.











  • 1 egg, whisked
  • 1 tbsp scallions, chopped
  • 1 tbsp bell pepper, chopped
  • 1 tbsp chopped jalapeño
  • salt and pepper to taste
  • 1/2 cup reduced fat Mexican blend shredded cheese
  • 1/2 tsp olive oil
  • cooking spray
  • 2 La Tortilla Factory Smart & Delicious Soft Wrap Minis


Combine the egg with scallions, bell pepper, jalapeño, salt and pepper to taste in a medium bowl.

Heat a small non-stick skillet over medium heat. When hot, add oil and egg mixture. Using a wooden spoon, mix the egg around so that it cooks evenly, about 2-3 minutes or until cooked through. Set aside.

Place a large skillet on medium heat and lightly spray with oil. Place one Soft Wrap Mini tortilla on the skillet, top with half of the cheese and cooked eggs. Top with additional cheese and the second tortilla. When the cheese is melted and the bottom of the tortilla is golden, carefully flip it over to toast the other side. Cook an additional 2-3 minutes; slide onto a cutting board and slice it in half.

Serve with your favorite salsa or guacamole.
