Between working full-time, and being a part-time graduate student I’m definitely crunched for time! With such a busy schedule, proper nourishment can be a challenge, especially with drive-thru restaurants on every corner. A burger and fries ready in minutes sure is tempting most days!  But, rather than “give-in” to the fast food temptation, I’ve created a number of quick and easy recipes that are both delicious and nutritious.

These pizza recipes are two of my favorite options for saving time in the kitchen – ready in 20 minutes or less and under 350 calories each!

A key to keeping them quick and low-cal is utilizing La Tortilla Factory tortillas or flatbreads for the crust! My favorite options are either La Tortilla Factory’s Handmade Style Corn and Wheat Blend tortillas, or La Tortilla Factory’s Smart & Delicious flatbreads, but any variety will work, so choose your favorite.

BBQ Chicken Pizza

















Italian Sausage Pizza

  • 1 La Tortilla Factory Wrap, Tortilla or Flatbread
  • 2 oz Mild Italian sausage, cooked with casings removed
  • 5 – 8 halved cherry tomatoes
  • 1 Tbsp finely chopped red onion
  • 2 Tbsp favorite pizza sauce
  • 1 Tbsp pitted kalamata olives
  • 2 Tbsp chopped basil, or cilantro
  • 2 Tbsp cheese blend (mozzarella, asiago, romano)

Easy 1-2-3 Directions:

  1. Add your favorite sauce
  2. Add cheese
  3. Add toppings of your choice

Preheat oven to 375 bake until cheese is golden brown (about 5 mins)

  • Sliced pepperoncini
  • Goat cheese
  • Aspargaus
  • Red beets
  • Artichoke, bottled
  • Summer squash

  • Mascarpone cheese, lightly sweetened with sugar and vanilla extract
