I bet you’re busy, busy, busy this time of year – just like everyone else! When I have so much going on, it’s often hard to eat healthy and make nutritious meals in my own kitchen. However, if there’s ever a question as to what to have for dinner in my house, it’s almost always answered with, BBQ Chicken Quesadillas!

We almost always have the ingredients on hand to whip up these quick, easy, and satisfying quesadillas, which are stuffed with shredded chicken tossed with smoky BBQ sauce, and a modest amount of shredded cheese.

I like using La Tortilla Factory 100 Calorie Tortillas for my BBQ Chicken Quesadillas because although they’re low in calories, the tortillas themselves are nice and big, which means you don’t feel deprived. They’re also extremely low in fat, and high in fiber, so I can add a little extra cheese to my quesadilla, guilt-free.
Use leftover grilled, sautéed, or roasted chicken to make assembling this dish even faster, and hand shred your cheese for the best results. Sometimes I like to add grilled or caramelized onions in the middle for a pop of flavor, too!

BBQ Chicken Quesadillas

Serves 2

Ingredients:
•    2 cups cooked and shredded chicken
•    1/4 – 1/2 cup BBQ sauce
•    2 La Tortilla Factory 100-Calorie Tortillas
•    1 cup shredded sharp cheddar cheese, divided

Directions:
Add desired amount of BBQ sauce to chicken in a bowl then stir to coat and set aside. Heat a large skillet over medium heat then spray lightly with non-stick spray. Place a tortilla inside the skillet then sprinkle one half with 1/4 cup cheese. Add half the chicken then another 1/4 cup cheese, and fold the tortilla over. Cook for 3-4 minutes a side, or until golden brown, then repeat with remaining tortilla and ingredients. Let quesadillas cool for 2-3 minutes then cut into wedges and serve.
