At Skinny Mom, we love taking traditional recipes and making them “skinny.” Being healthy is more than just commitment and a bit of sacrifice. Being healthy is also about being creative! We pride ourselves on our Skinny Recipes, because they are healthy, easy to make, and DELICIOUS – which is at times hard to come by.

The Skinny Buffalo Chicken Wrap is a delicious twist on an old favorite. We have cut calories, fat, and carbs while maintaining the same bold flavor taste with the delicious La Tortilla Factory wraps!

First step, make Buffalo Wing Hummus:

Ingredients:

• 15oz. can of chickpeas (rinsed well and drained)

• 1/3 cup tahini

• 1 clove garlic, chopped or crushed

• 1/4 cup buffalo sauce

• 1/4 cup water

Directions:

Combine all the ingredients in a food processor, blender, or mixing bowl (to use a hand blender) – puree until smooth.  A food processor and blender work best, I used my hand blender and it wasn’t as smooth as I would have liked.  But not so chunky that is was worth getting another dish dirty!

Now – to make this into a fantastic wrap.  I spread a pretty thick layer  (about 2 tablespoons) of hummus on top of a La Tortilla Factory Mini Soft Wrap.  La Tortilla Factory has an assortment of wraps to fit any dietary needs – low carb, high fiber, or in my case, these wraps which are only 1 Weight Watcher Point Plus each!   I then topped my hummus layer with shredded chicken (1/2 cup), broccoli slaw, and reduced fat cheese.  Roll it up, and enjoy!  Fat free ranch dressing makes a great dipping sauce that amplifies the buffalo wing flavor.

I like these wraps for a few reasons – first, they taste great.  But also, they aren’t nearly as messy as the traditional buffalo wrap (less mess the better for mom), you can leave the chicken out for a very satisfying vegetarian wrap option, and they are healthy!
