This indulgent casserole makes plenty to feed a game-day crowd. Doctoring canned red enchilada sauce lends it the savory-spicy-smoky flavor of classic al pastor tacos. If available in your area, you can also substitute our Al Pastor Skillet Sauce Starter for the first 9 ingredients.

2 tablespoons minced onion

2 tablespoons orange juice

1 tablespoon tomato paste

1 tablespoon apple cider vinegar

1 tablespoon pineapple juice

1 tablespoon lime juice

½ teaspoon ground cumin

1 chipotle chile, canned in adobo sauce

1 garlic clove

1 (28-ounce) can red enchilada sauce

12 Non-GMO Hand Made Style Tortillas, White Corn & Wheat (1½ packages)

2 cups shredded cooked chicken

1 (15-oz) can black beans, drained and rinsed

1 (15-oz) can corn, drained

1 (8-ounce) package shredded Mexican-blend cheese

¼ cup chopped cilantro (optional)

3 green onions, thinly sliced (optional)

1 avocado, diced (optional)


Position rack in middle of oven. Preheat oven to 375°F. Grease a 13-by-9-inch baking dish.

Combine first 9 ingredients in a blender or food processor and process until smooth. Add enchilada sauce and pulse to combine.

Spread ½ cup sauce in bottom of dish. Top with 4 tortillas, cutting them as needed to cover evenly. Spread with 1¼  cups sauce. Top with half the chicken, half the beans and half the corn. Sprinkle with 2/3 cup cheese. Top with 4 tortillas, cutting as needed to cover, and spread with 1¼ cups sauce. Top with remaining chicken, beans and corn. Sprinkle with 2/3 cup cheese. Top with 4 tortillas, cutting as needed to cover. Spread with 1 cup sauce and sprinkle with remaining cheese.

Cover pan with foil. Bake 30 minutes. Uncover and bake 15 minutes or until sauce is bubbling and cheese is melted and golden. Let stand 10 minutes. Sprinkle with cilantro, green onions and avocado.
