How do you take a plateful of nachos and make them #SimplyBetter? With the help of our Simply Better tortillas and deliciously tender meat layered together for a perfect platter of crisp, flavorful bites created by our friend and grillmaster Chef Anthony Serrano. 

Prep time: 20 min | Cook time: 1.5 hours | Serves 3 – 6

Ingredients

  • 1 Package La Tortilla Factory Simply Better Tortillas
  • 1 La Tortilla Factory Barbacoa Sauce Starter packet
  • 1 Beef Brisket or Beef Chuck
  • 32 oz. Beef Broth
  • Avocado Oil Spray
  • Sea Salt
  • Queso Sauce
  • Fresh Pico de Gallo (chopped white or red onion, tomato, green pepper, cilantro, lime juice, salt + pepper)
  • Fresh Avocado Slices
  • Diced or Pickled Red Onion
  • Pickled or Fresh Jalapeño
  • Crumbled Chihuahua or Queso de Oaxaca for extra flavor
  • Sour Cream or Crema
  • Fresh Cilantro

Directions

  1. Start by trimming the fat cap off the beef brisket. Cut the brisket into smaller manageable pieces.
  2. Place the La Tortilla Factory Barbacoa Sauce Starter Packet, brisket, and beef broth into a pressure cooker. Seal according to the pressure cooker directions and cook on high for 60 minutes. Remove the meat when it is safe to do so according to the pressure cooker directions. Allow the meat to rest for 20 minutes in the liquid and then remove the meat from the liquid.
  3. Place the meat in a large bowl or on a cutting board and carefully shred the meat. Add back in 1-2 cups of the liquid from the pressure cooker to the meat to keep it juicy.
  4. Cut the La Tortilla Factory Simply Better Tortillas into quarters. Place the tortillas on a baking rack and sheet. Lightly spray both sides of the tortillas with avocado oil. Bake the tortillas in a preheated oven at 350°F for 5 minutes. Flip the chips over and bake for another 5 minutes or until the chips have reached your desired level of crispiness. Remove from the oven and allow to cool.
  5. Build your nachos by shingling the chips on a plate or baking sheet. Drizzle queso sauce over the chips followed by shredded brisket. Top with your favorite nacho toppings.
