Who needs a bun when you’ve got tortillas? These sliders are a fun addition to your summer barbecue.

Prep time: 20 minutes | Cook time: 10 minutes

Ingredients

2 pounds 80 percent lean ground beef
1 tablespoon olive oil, plus extra for brushing grill
1 tablespoon chopped garlic
1 tablespoon Dijon mustard
1 teaspoon chopped thyme
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
8 slices (4 ounces) light Cheddar cheese
1 package of La Tortilla Factory 100 Calorie Tortillas, Whole Wheat or Traditional
Ketchup (optional)
Mustard (optional)
Mayonnaise (optional)
4 ounces baby arugula
3 medium tomatoes, sliced 1/8 inch thick
1/2 avocado, sliced
2 small red onions, sliced in 1/8 inch thick
Garnish ideas: alfalfa sprouts, hamburger pickles

Directions

Preheat grill.

Combine first 7 ingredients (beef through pepper) in a large bowl. Mix gently with a fork to combine, taking care not to compress ingredients. Shape into 8 (2-inch) sliders of equal thickness.

Brush grill grate with oil. Place sliders on grill and cook 4 minutes. Turn sliders over with a spatula and cook another 4-6 minutes, until medium-rare or desired degree of doneness. During last 2 minutes of cooking, top each slider with 2 tablespoons cheese and close grill lid. Remove sliders to a platter and cover with foil.

Lay tortillas on a work surface. Lightly spread with ketchup, mustard and/or mayonnaise, if desired. Top evenly with arugula, tomatoes, avocado and onions, placing vegetables near top of tortillas at 12 o’clock. Top each slider with 1 slice of cheese. Fold each tortilla in half horizontally to cover slider and again in sides to create an envelope. Once wrapped, place sliders seam-side-down on the grill to lightly toast and seal tortillas.
