Quesadillas are a quick and easy, kid-friendly way to think outside of the lunch box. Add thinly sliced red pepper or apples to sneak in some bonus nutrition.

2 La Tortilla Factory Organic, Non-GMO Tortillas, Traditional Flour
2/3 cup shredded sharp Cheddar cheese, divided
1/2 cup thinly sliced red bell peppers (optional)
1/2 cup thinly sliced apples (optional)


Heat a large nonstick skillet over medium heat. Place 1 tortilla in skillet and sprinkle one half with 1/3 cup cheese. Add half the sliced bell pepper or apple, if using. Fold tortilla in half. Repeat with remaining tortilla and cheese. Cook 2-3 minutes on each side or until lightly browned on both sides. Cut quesadillas into 4 wedges.
