1 tbsp olive oil or beef tallow

1 red bell pepper, sliced

1/2 red onion, sliced

1 tbsp minced garlic

1 tbsp minced ginger

2 tbsp curry powder

1 tsp coriander

1 tsp cumin

1 tsp paprika

1/2 tsp chile powder

1/2 tsp red pepper flakes

1/8 tsp brown sugar

1 tbsp tomato paste

1/2 cup plain yogurt

1/2 cup coconut milk

2 chicken breasts

1 package of La Tortilla Factory Hand Made Style tortillas

1 tbsp cilantro for garnish



Grill chicken over an open flame for 5-7 minutes on each side until char marks appear. Chop and set aside.

Add olive oil (or beef tallow), bell pepper, and onion in a hot pan or cast iron skillet; cook for 4 minutes.

Add garlic and cook for 1 minute.

Add ginger, curry powder, bay leaf, coriander, cumin, paprika, chili powder & red pepper. Cook for 1 minute. 

Add tomato paste, yogurt, coconut milk, and brown sugar, and stir to combine.

Add the grilled chicken, cover, then reduce heat to low and cook for 15 minutes.

Heat up La Tortilla Factory Hand Made Style tortillas over a hot comal using a couple drops of olive oil.

Place your grilled chicken curry onto toasted tortillas with red pepper, red onion and a little sauce.

Garnish with a sprinkle of cilantro.
