INGREDIENTS

1 package of low-carb or Carb Cutting La Tortilla Factory tortillas

4 cups red and green cabbage, shredded

½ red onion, thinly sliced

1 lime, juiced

Pinch sea salt and pepper

¼ cup fresh cilantro, chopped

¼ cup olive oil

1 1/2 lbs. shrimp, peeled and deveined

1 tbsp olive oil

3 tbsp honey

2 chipotle peppers, chopped

2 tbsp adobo sauce from can of chipotles

Cotija cheese, for serving

Lime wedges, for serving

DIRECTIONS

  1. In a bowl, mix the cabbage, red onions, cilantro, ¼ cup olive oil, pinch of salt and pepper and juice from one lime. Set aside.
  2. Pat the shrimp dry with paper towel and season with salt and pepper.
  3. In a bowl, whisk together the honey, adobo sauce and chipotle peppers.
  4. Heat 1 tbsp oil in large skillet. Add shrimp and cook for 30 seconds, flip and cook for another 30 seconds. Pour in honey chipotle sauce and cook for another 2-3 minutes.
  5. Fill tortillas with shrimp. Top with slaw and cotija cheese. Serve with lime wedges. Enjoy ☺
