1 bunch dinosaur kale zipped and chopped, thinly

1 cup rotisserie chicken, shredded

red and golden cherry tomatoes, sliced

2 tablespoons Caesar dressing

juice of one small lemon

Parmesan cheese, finely grated, optional

4 La Tortilla Factory Non-GMO Low Carb Flour Tortillas, Burrito Size



In a large bowl combine kale, chicken, tomatoes, dressing and lemon juice. Gently toss and “massage” for 3 minutes or so, allowing the lemon juice to soften the kale. Set aside. Warm tortillas in a dry skillet on medium-high heat. On a flat work surface, place a scoop of salad into the warm tortilla. Sprinkle with Parmesan cheese. Roll and enjoy or wrap in parchment paper for a more finished look.
