A powerhouse of protein, healthy fats and super nutritious sprouts makes this the perfect “pink” wrap for the month of October.  Have it in lieu of a traditional lox and bagel for a delicious and satisfying breakfast you can feel good about.

Ingredients

2 La Tortilla Factory Low Carb, High Fiber Tortillas, Whole Wheat, Large Size

1/4 cup whipped light cream cheese

1/2 English cucumber, thinly sliced, divided

4 ounces smoked salmon, thinly sliced, divided

2 teaspoons capers

2 generous handfuls of radish sprouts

Preparation

On a flat work surface, spread each tortilla with half of the cream cheese. Arrange cucumber slices on each tortilla in a single row, overlapping them slightly, and leaving a strip about 1 inch wide along one edge of the tortilla uncovered. Arrange salmon over the cucumbers; top with capers and sprouts.

Roll tortillas tightly, pressing firmly on cream cheese end to seal. Turn seal side down and, using a serrated knife, cut each wrap in half on the diagonal. Serve immediately or wrap tightly in plastic wrap and refrigerate for later.
