1 package of La Tortilla Factory tortillas

2 tbsp melted butter

1/4 cup granulated sugar

1/2 tsp ground cinnamon

1/2 cup pure pumpkin

4 oz cream cheese

1 tbsp cinnamon sugar

1/4 tsp pumpkin pie spice

1/4 tsp vanilla extract

Whipped topping



Cut tortillas into 4-inch circles with a cookie cutter.

In a bowl, combine the sugar and cinnamon. Coat both sides of the La Tortilla Factory tortillas with the melted butter and then dip each side into the cinnamon sugar mixture—place tortillas in an upside-down cupcake pan between the cups to hold their shape while baking.

Bake at 400 degrees for 7-8 minutes or until golden brown. Remove from oven and cool completely before adding the pumpkin mixture.

In a bowl, beat the pumpkin, cream cheese, vanilla and cinnamon sugar until smooth.

Fill each tortilla with pumpkin filling and top with whipped topping. Sprinkle with additional cinnamon.
