6 La Tortilla Factory Low Carb Tortillas
1 10 oz can red enchilada sauce
1lb ground beef
1 packet taco seasoning
1 can black beans
1 can refried beans
1 jar yellow queso of your choice (We recommend 505 Southwestern)
1 bag Mexican microwavable rice
1 8 oz bag shredded fiesta cheese (or more, to your preference)
Sour cream


Preheat your oven to 350 degrees.

While your oven heats, cook ground beef and taco seasoning over medium heat until browned and crumbly. Heat your rice packet per directions provided.

Once meat is cooked, add in black beans and set aside and begin to assemble lasagna.

Begin by adding a thin layer of enchilada sauce to the casserole dish. Next add two low carb tortillas. Then add the ground meat and bean mixture followed by dollops of refried beans, Mexican rice, and a drizzle of queso cheese. Finish with shredded fiesta cheese and more enchilada sauce.

Repeat these steps ending with tortillas, enchilada sauce, and cheese on top. Place the casserole dish in the preheated oven and bake for 35 minutes. Remove from the oven and let sit for an additional 5-10 minutes.

Cut into squares and top with fresh cilantro and sour cream.
