Start your day with this authentic breakfast quesadilla made with our Hand Made Style corn tortillas. These fresh-from-the-kitchen tortillas are made with a unique blend of corn and wheat for a soft texture and amazing flavor.

Ingredients

2 La Tortilla Factory Hand Made Style Tortillas, White Corn  or Yellow Corn
1/4 cup low fat shredded Cheddar cheese
Nonstick cooking spray
1 large egg
2 tablespoons fresh salsa

Directions

Heat a nonstick skillet over medium-high heat. Place 1 tortilla in pan, top with cheese and remaining tortilla. Cook until cheese is almost completely melted, about 2 minutes. Turn quesadilla, and cook 1 minute or until toasted. Transfer quesadilla to a plate.

Reduce heat to medium. Coat pan with cooking spray. Crack egg directly into pan. Cook until white is set. Top quesadilla with fried egg. Add salsa to pan and cook 15-30 seconds or until warm. Spoon salsa over egg.
