What would a Mexican night be without plenty of guacamole? Our go-to guac recipe is addictive on its own and even more irresistible when added to burritos, nachos, tacos, and more. So yeah, plan on making extra.

Ingredients

4 large, ripe avocados

1/2 cup diced, seeded plum tomatoes

1/4 cup finely chopped red onion

2 tablespoons finely chopped cilantro

2 teaspoons finely chopped jalapeño, seeds removed (adding seeds adds heat so choose carefully!)

1 tablespoon fresh lime juice

1/2 teaspoons Kosher salt

 

Directions

Peel, pit, and slice avocados in half and add to a medium-sized mixing bowl or large mortar. Using a fork or pestle, lightly smash the avocados.

Fold in the onion, cilantro, jalapeños, and salt, gently smashing the ingredients together.

Stir in the tomatoes and lime juice until all the ingredients form a chunky-smooth consistency.

Just before serving, taste and adjust seasonings by adding a pinch of salt and/or a squeeze of lime.

Top with a few sprigs of fresh cilantro and serve with warm tortilla chips.

Pro Tip: If you are making the guac a few hours ahead of when it will actually be served, keep the avocado pit and add it to the bowl then cover with saran wrap and refrigerate. Before you serve, remove the pit, squeeze a lime over top and mix to re-fresh the chunks and the vibrant green color.
