Kid-friendly and ready in a matter of minutes, quesadillas quickly become a substantial dish with the addition of fresh fruit, veggies or grilled meats.

2 La Tortilla Factory Organic Flour Tortillas, Gluten-Free Tortillas, or Light Flour Tortillas

1/4 pound chicken, grilled or shredded (leftovers work great!)

1/3 cup of your favorite BBQ sauce

1 fresh peach, thinly sliced

2 ounces reduced-fat provolone or Jack cheese, shredded

2 olive oil sprays


Place chicken and BBQ sauce in a bowl. Toss to coat chicken completely and microwave for 2 minutes or until warm.  Next, heat a sauté pan on medium heat.  Place one tortilla in the pan and heat until warm. Spray the tortilla with a small amount of spray oil and flip – this will help with crisping. Layer with one ounce of cheese, chicken, peach slices and finish with the remaining cheese. Place another tortilla on top and lightly coat with oil spray, let quesadilla cook for a few minutes until the cheese begins to melt. Next, using a spatula, carefully flip the quesadilla and continue cooking until the bottom is golden brown. Slice into four and serve with a side of BBQ sauce for dipping. Enjoy immediately.
