Our friend and grillmaster Chef Anthony Serrano created this taco full of flavor and flare. Serve together or even as standalone components to your favorite meal.

Ingredients – Carne Asada

Ingredients – Elote Guacamole

  • 4  avocados peeled, pitted, & diced
  • 1 cup corn (grilled and kernels cut off Cobb)
  • 1/2 cup finely chopped Fully Cooked Bacon
  • 1 lemon (grilled & juiced)
  • 1-ounce pickled Jalapeño  (liquid & peppers)
  • 1 tablespoon diced cilantro
  • 3 green onions diced
  • 1/4 cup red onion diced
  • 1/2 tablespoon fine pink sea salt
  • 1 tbsp avocado mayo
  • 1 cup cherry tomatoes diced

Ingredients – Charred Romaine Slaw

  • 1 La Tortilla Factory Baja Sauce Starter
  • 4 romaine hearts, cut in half lengthwise
  • 1 lemon, grilled & juiced
  • Avocado oil spray
  • 1 cup broccoli (for a short cut, try a bagged Coleslaw mix)
  • 1/4 cup red onion diced
  • 1 tbsp cilantro chopped
  • 1/2 cup avocado mayo

Directions

Carne Asada 

Prep time: 10 min + ideally 6 hours | Cook time: 15 min | Serves 4 – 6 

  1. In a large bowl combine La Tortilla Factory Barbacoa sauce starter and avocado oil. Mix until thoroughly incorporated.
  2. Coat flank steak with marinade and refrigerate for 2-12 hours.
  3. Grill on a high heat grill for about 3-4 minutes on each side and until it reaches desired doneness.
  4. Remove from heat and rest for 10 minutes.
  5. Slice against the grain and serve with on grilled tortilla.
  6. Top with Charred Romaine Slaw & Elote Guacamole and enjoy.

Elote Guacamole

Prep time: 10 min | Serves 4 – 6 

  1. Using a fork or potato masher smash avocados until you have a chunky consistency.
  2. Gently mix in the rest of the ingredients until they are thoroughly incorporated.

Charred Romaine Slaw

Prep time: 10 min | Cook time: 3 min | Serves 4 – 6 

  1. Spray avocado oil on both sides of the romaine hearts. Place romaine hearts on a medium-high grill until they have char marks. Grill for approximately 2-3 minutes.
  2. Slice the romaine thinly and cool completely before use.
  3. Place the romaine and the remainder of the ingredients in a bowl and mix until thoroughly incorporated.
  4. Refrigerate until served.
