Our friend and grillmaster Chef Anthony Serrano created the ultimate Mexican Pizza– perfectly sized for individual portions or when entertaining a crowd.

Prep time: 15 min | Cook time: 30 min | Serves 4

Ingredients – Taco Meat

  • 1 La Tortilla Factory Classic Taco Sauce Starter packet
  • 1 tbsp avocado oil
  • 2 lbs. lean ground beef, you can also swap for lean ground turkey or pulled chicken
  • 1/2 onion diced
  • 1/2 cup chunky salsa
  • 5 cloves garlic

Ingredients – Smashed Beans

  • 1 La Tortilla Factory Barbacoa Sauce Starter Packet
  • 1 can Pinto Beans
  • 1 can Black Beans
  • 1/2 cup sour cream
  • 1/2 cup cheddar cheese

Ingredients – Shell & Other Toppings

  • 1 package of your choice of La Tortilla Factory Low Carb Tortillas
  • 48 oz. Vegetable Oil
  • La Tortilla Factory Green Enchilada Sauce
  • Smashed Beans
  • Taco Meat
  • 2 cups of cheese, we recommend a good melting cheese like a Mexican blend, Monterey Jack, or White Cheddar
  • To taste:
    • Shredded Lettuce
    • Radish
    • Red Onion, diced
    • Green Onion, diced
    • Ultimate Guacamole
    • Sour Cream

Directions

Taco Meat

  1. In a large skillet over medium-high heat, cook meat, onion, salsa, & garlic, stirring and breaking up, until browned, about 5 minutes.
  2. Add Classic Taco Sauce Starter packet and cook for 1-2 minutes longer, or until meat is cooked throughout.
  3. Set aside and keep warm

Smashed Beans

  1. Combine Barbacoa Sauce Starter, pinto and black beans, sour cream, and cheddar cheese in a heavy duty sauce pot. Stir frequently and bring to a gentle simmer.
  2. Remove from the heat and smash to your desired consistency using a potato smasher or immersion blender.
  3. Set aside and keep warm.

Build Your Pizza

  1. Using the tip of a paring knife poke 10-12 small pin holes throughout each side of the tortilla.
  2. In a deep heavy duty sauce pot, heat oil to 350-375°F. Use a thermometer to check and maintain temperature.
  3. Gently place one tortilla at a time in the hot oil using high heat-safe tongs. Turn the tortilla every 20 seconds and cook for 45-60 seconds or until both sides are golden brown.
  4. Drain the shell over the pot and carefully remove from the oil. Place the shell on a sheet tray lined with paper towels to absorb the excess oil.
  5. Spread a thin layer of smashed beans on one side of the fried tortilla shell.
  6. Add 1/4 cup of cooked ground beef, cheese, and a 2 tablespoons of La Tortilla Factory Green Enchilada Sauce.
  7. Create another layer in the same order and place it on top of the first layer. Place the pizza in a cast iron pan or baking sheet.
  8. Place in a pre-heated grill or oven at 350°F for 10 minutes or until the cheese has melted.
  9. Remove from the heat and garnish with lettuce, red onion, radish, cheese, salsa, sour cream, green onion, or guacamole.
  10. Enjoy!
